Turkey & zuchinni stir fry

Quick and tasty low fat meal with over 50g protein per portion – what’s not to like!

Ingredients – enough for 2 good portions

    • 400g Turkey breast steak
    • 1 large courgette
    • ½ medium onions
    • 70g chestnut mushrooms
    • ½ green pepper
    • 1 teaspoon garlic puree
    • 1 teaspoon ground or minced ginger
    • 1 teaspoon ground nut oil
    • 1 tablespoon dark soy sauce
    • Salt and black pepper
    •  To serve: 1 tablespoon sweet chilli sauce drizzled over mmmm

Method

This really is as easy as 1-2-3

    1. Slice all the vegetables and turkey into strips
    2. Heat the oil in a wok or large pan
    3. Add all the ingredients at the same time, including the garlic and ginger, and stir fry until the turkey is cooked through (about 10 minutes)

Serve drizzled with sweet chilli sauce and basmati rice or my sweet potato and cauliflower bhajee!
