Sweet potato & cauliflower bhajee

This is one seriously delicious and warming side dish

Ingredients – plenty for two

    • 200g cauliflower
    • 450g Sweet potato
    • 2 teaspoons curry powder (yeh I know it’s cheating!)
    • 1 teaspoon garlic puree
    • 1 teaspoon ground or minced ginger
    • ½ teaspoon chilli flakes
    • 20g creamed coconut (crumbled or grated)
    • Salt and pepper

Method

This dish is best cooked in the microwave to prevent the sweet potato from going too soft.

      1. Chop the cauliflower and sweet potato into chunks (approx 3-4cm)
      2. Place in a microwaveable dish, with 2 tablespoons of water, cover and cook on high for 8 minutes
      3. Crumble or grate the creamed coconut and add to the vegetables along with the garlic, ginger, curry powder and chilli flakes
      4. Stir gently to make sure the vegetables are covered and the water absorbs the spices and coconut
      5. Cook on high for another 2-3 minutes until the veg are soft but not soggy
      6. Season to taste and serve
